Ingredients:
- 250g large prawns, peeled and deveined
- 2 cups mixed greens lettuce, spinach, arugula
- 1/2 cucumber, thinly sliced
- 1/2 red bell pepper, thinly sliced
- 1/4 red onion, thinly sliced
- 1/4 cup fresh cilantro leaves
- 1/4 cup fresh mint leaves
- 1/4 cup roasted peanuts, crushed
- 2 cloves garlic, minced
- 1 red chili, thinly sliced adjust to taste
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 tablespoon brown sugar
- 1 tablespoon vegetable oil
Instructions:
In a pan, heat vegetable oil over medium-high heat
Put in the prawns and minced garlic
Saut until the prawns turn pink and opaque
Put away
In a large bowl, combine mixed greens, cucumber, red bell pepper, and red onion
Whisk the fish sauce, lime juice, and brown sugar together in a small bowl until they are well mixed
Toss the salad to coat it with the dressing
To the salad, add the cooked prawns, fresh mint, cilantro, and chili slices
Toss slowly
Put roasted peanuts that have been crushed on top of the salad
Serve right away and enjoy
