Ingredients:
- 6 medium-sized apples, cored
- 1/2 cup chopped nuts pecans or walnuts
- 1/2 cup raisins or dried cranberries
- 1/4 cup pure maple syrup
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 tablespoon lemon juice
- 2 tablespoons unsalted butter or dairy-free alternative optional
Instructions:
Chopped nuts, raisins or dried cranberries, maple syrup, ground cinnamon, ground nutmeg, and salt should all be put in a bowl together
Combine well
Place a core in the middle of each apple and stuff it full of the nut and fruit mixture
Put the stuffed apples in the crock pot
Pour lemon juice over the apples to keep them from turning brown
You can put a small piece of butter or a dairy-free spread on top of each apple if you want to
Turn the heat down to low and cover the slow cooker
Cook for three to four hours, or until the apples are soft but still have their shape
Serve the apples warm, and pour any sauce left over from the slow cooker over them
