Ingredients:
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/3 cup cocoa powder
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/2 cup shredded sweetened coconut
- 1/2 cup chopped pecans
- 1/3 cup sweetened condensed milk
- 1/2 cup semisweet chocolate chips
Instructions:
Warm the oven up to 175F 350C
Coat a mini muffin pan with cooking spray or use muffin liners to line it
Melt butter in a bowl that can go in the microwave
Add the eggs, sugar, and vanilla extract and mix them in well
Mix in the baking powder, cocoa powder, salt, and flour, and stir until the mixture is smooth
Fill each mini muffin cup about two thirds of the way to the top with batter
Shred the coconut, chop the pecans, and mix them with the sweetened condensed milk in a small bowl
Place a small amount of the coconut mix on top of each cup of brownie batter
Add the chocolate chips on top of the coconut mix
Before you put it in the oven, heat it up
Bake it for 12 to 15 minutes, or until the edges are set and a toothpick inserted into the middle comes out with moist crumbs on it
Let the brownie bites cool for 5 minutes in the muffin tin before moving them to a wire rack to cool all the way through
