This chorizo cotija guacamole toast is a tasty take on traditional avocado toast. Its full of savory and creamy goodness. When you mix crispy chorizo, tangy cotija cheese, and creamy guacamole, you get a deliciously satisfying snack or meal.
Ingredients:
- 4 slices of bread
- 200g chorizo, sliced
- 1 ripe avocado
- 50g cotija cheese, crumbled
- 1 lime, juiced
- 1/4 red onion, finely chopped
- 1 tomato, diced
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
Instructions:
Preheat a skillet over medium heat
Add chorizo slices to the skillet and cook until browned and crispy, about 5-7 minutes
Remove from skillet and set aside
In a bowl, mash the ripe avocado with lime juice until smooth
Season with salt and pepper
Toast bread slices until golden brown
