Broccoli and Edamame Salad with Peanut Dressing

This broccoli and edamame salad with peanut dressing is delicious. It has crunchy vegetables, protein-rich edamame, and a creamy peanut dressing that tastes a bit like Asian food. This salad is healthy and refreshing, and it goes well with any meal as a side dish or as a light lunch.

Ingredients:

  • 2 cups broccoli florets
  • 1 cup shelled edamame
  • 1/2 cup red bell pepper, thinly sliced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup roasted peanuts, chopped
  • 2 tablespoons fresh cilantro, chopped
  • For the Peanut Dressing:
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 teaspoon red pepper flakes adjust to taste
  • Salt and pepper to taste

Instructions:

Steam the broccoli and edamame until tender, about 3-4 minutes

Rinse them under cold water and drain well

In a large bowl, combine the steamed broccoli, edamame, red bell pepper, red onion, roasted peanuts, and cilantro

In a separate bowl, whisk together all the ingredients for the peanut dressing until smooth and well combined

Pour the peanut dressing over the salad and toss until all the ingredients are coated evenly

Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld

Serve chilled and garnish with additional peanuts and cilantro if desired
