Ingredients:
- 200g firm tofu, cubed
- 1 cup broccoli florets
- 1/2 red bell pepper, sliced
- 1/2 yellow bell pepper, sliced
- 1 carrot, julienned
- 1 cup snap peas
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/2 teaspoon red pepper flakes optional
- Cooking spray
- Salt and pepper to taste
- Chopped green onions and sesame seeds for garnish
Instructions:
Press tofu to remove excess water, then cut into cubes
In a small bowl, mix soy sauce, rice vinegar, sesame oil, and red pepper flakes if using
Spray a non-stick pan with cooking spray and heat over medium-high heat
Add tofu cubes and cook until they turn golden brown, then remove from the pan and set aside
In the same pan, add a bit more cooking spray if needed, then add minced garlic and ginger
Saut for 1-2 minutes until fragrant
Add broccoli, bell peppers, carrot, and snap peas
Stir-fry for about 5 minutes until they begin to soften
Return the cooked tofu to the pan and pour the sauce over the tofu and vegetables
Stir-fry for an additional 2-3 minutes until everything is well-coated and heated through
Season with salt and pepper to taste
Serve the low-calorie Asian tofu stir-fry hot, garnished with chopped green onions and sesame seeds
