Ingredients:
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1/4 cup water
- 4 large egg yolks
- 1 teaspoon vanilla extract
- 1/2 teaspoon sea salt
- 1/2 cup chopped salted caramel candy
Instructions:
In a saucepan, combine heavy cream and milk
Heat over medium heat until it begins to simmer, then remove from heat
In a separate saucepan, combine sugar and water over medium-high heat
Cook without stirring until it turns a deep amber color
Slowly pour the hot cream mixture into the caramelized sugar, stirring constantly
In a bowl, whisk egg yolks
Slowly pour the caramel mixture into the egg yolks, whisking constantly
Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens slightly and coats the back of a spoon
Remove from heat and stir in vanilla extract and sea salt
Strain the mixture through a fine mesh sieve into a clean bowl
Cover and chill in the refrigerator for at least 4 hours or overnight
Churn the chilled mixture in an ice cream maker according to manufacturers instructions
During the last few minutes of churning, add chopped salted caramel candy
Transfer the churned ice cream to a freezer-safe container and freeze until firm, about 4 hours
Serve and enjoy
