Nobody will ever suspect that the filling for this delicious pie is made from watermelon rind. Cranberries, walnuts, sugar, flour, and pumpkin pie spice are mixed with the cooked rind after it has been cooked until it is tender. After being spooned into a pastry shell, this delicious filling is then covered with a top crust and baked until golden. It is brushed with a mixture of orange juice, orange rind, and confectioners sugar while it is still warm.
