Blueberry and Jasmine Tea Marshmallows

Blueberries and jasmine tea make a delicious combination that will up your marshmallow game. Soft and fluffy, these homemade marshmallows are enhanced with the sweet tartness of blueberries and the subtle floral notes of jasmine tea. Ideal for adding to your favorite hot beverage, snacking, or gift-giving.

Ingredients:

  • 1/2 cup frozen blueberries
  • 1/4 cup boiling water
  • 2 tablespoons loose leaf jasmine tea
  • 3 envelopes unflavored gelatin
  • 1/2 cup cold water
  • 2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Powdered sugar, for dusting

Instructions:

Pour the boiling water over the loose leaf jasmine tea in a small bowl

After letting the tea steep for five to seven minutes, strain it to get the leaves out

Put aside

To soften, sprinkle the gelatin over the cold water in a different bowl and let it sit for about ten minutes

Put the sugar, corn syrup, and salt in a saucepan

After adding the blueberries, increase the heat to medium-high and boil the mixture

Boil for a further five to seven minutes, or until a candy thermometer registers 240F 115C for the syrup

Take the blueberry syrup off of the stove and give the jasmine tea a gentle stir

Take care, as it might explode

Pour the hot blueberry and tea mixture slowly into the softened gelatin using a low-speed electric mixer

The mixture should become thick and fluffy after 10 to 12 minutes of beating on high speed

Incorporate the vanilla extract by beating for an extra minute after adding it

To keep it from sticking, grease a 9 x 13 inch 23 x 33 cm pan and sprinkle it with powdered sugar

Using a spatula, level the top of the marshmallow mixture once it has been poured into the prepared pan

Add a little more powdered sugar on top

Let the marshmallows sit overnight or for at least four hours at room temperature

After the marshmallows have set, cut them into the desired shapes with a sharp knife or cookie cutters

To keep them from sticking, dust the cut edges with extra powdered sugar
