Ingredients:
- 2 chicken breasts, thinly sliced
- 1 cup cashews
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 1-inch piece of ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon cornstarch
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions:
In a small bowl, mix soy sauce, oyster sauce, hoisin sauce, and cornstarch
Set aside
Heat vegetable oil in a wok or large skillet over high heat
Add minced garlic and ginger
Stir-fry for 30 seconds until fragrant
Add sliced chicken and cook until no longer pink
Remove from the pan and set aside
In the same pan, add more oil if needed and stir-fry cashews until lightly toasted
Remove and set aside
Add sliced onions and bell peppers to the pan
Stir-fry for 2-3 minutes until they start to soften
Return the cooked chicken to the pan and pour the sauce mixture over it
Stir-fry for another 2-3 minutes until the sauce thickens and coats the ingredients
Add salt and pepper to taste
Stir in toasted cashews
Serve hot over steamed rice
