This recipe for guacamole is fresh, simple, and real. You can dip or top your favorite Mexican dishes with it.
Ingredients:
- 4 ripe avocados
- 1/2 cup diced red onion
- 1/2 cup diced tomato
- 1/4 cup chopped fresh cilantro
- 1 jalapeo pepper, minced seeds removed for milder guacamole
- 2 cloves garlic, minced
- Juice of 2 limes
- Salt and pepper to taste
Instructions:
Cut the avocados in half, remove the pit, and scoop the flesh into a bowl
Mash the avocados with a fork or potato masher until your desired level of chunkiness
Add the diced red onion, diced tomato, chopped cilantro, minced jalapeo pepper, and minced garlic to the mashed avocados
Squeeze the juice of 2 limes over the mixture and season with salt and pepper to taste
Stir everything together until well combined
Taste and adjust seasoning, adding more salt, pepper, or lime juice if needed
Serve immediately with tortilla chips or as a topping for tacos, burritos, or your favorite Mexican dishes
